The a/c on my '84 conv does not work. We would like the remove it. However, the alternator bracket is braced to the compressor. So would it be possible to remove the a/c system? If so how would we brace the alternator? What changes would be involved?

You would have to convert all of the pullies and mounts over to what was used on non-AC models. I've done it before, but its been way to many years for me to remember the details of what all you'd exactly need. I think your best bet is to try to find a donor car in a junkyard that has everything you need.

I have a 1982 Rabbit Diesel w/AC. A mechanic told me the same thing. I didn't actually want to get rid of the AC. But he said that having AC on the Diesel adds a lot of stress to the motor mounts. So if you don't want it, it'd probably be better to get rid of it.

Can you run a different sized belt and just skip the compressor? Pump the system down and pull out the hoses etc. Just leave the compressor in place to use for the bracket..

Nope, you can't skip the compressor - the pulley alignment is different There were several different alternator pullies with different offsets for different setups - having or not having AC, and power steering were the variables. And I seem to recall different offsets on water pump and maybe crankshaft pullies too.
Here's two diagrams where you can see the difference:
