I'm putting together an early 40hp engine to be a daily driver in my 1956 single cab. I guess I did put one together once in about 1968, but I'm not even sure if I got it right then!
There are a few odd parts on this and I'm not quite sure what to do about them. this is an early 40 hp with the steel rocker stands that screw into the head by the combustion camber. (not the later ones with the square alloy boss)
There were thin washers under the rocker stands. Why?
What # to torque the heads to? Pattern same as later type 1 motors?
Valve lash?
How to adjust the thermostat fan ring?
I don't even know what I don't know. I guess that's often the case!

As for the shims under the rockers it sounds like they needed to be shimmed to keep proper rocker/valve geometery. Probably due to heads being flycut during previous rebuild.
Valve lash screw must be straight to the valve stem halfway through its arc. If not valve stem is pushed more in one direction sideways into the valve guide causing premature wear of the guide.
