I read somewhere that all turn signal switches were the same from 65 and down, and were 6 wires. Would a 3 wire switch work for my 58 bus?

6 wire is U.S., 3 wire is Euro

So its safe to say I cant use a 3-wire switch on my bus and still have full functionality of my turn signals?

That is correct.
3 wire switches were for semaphores, 6 wire for flashing signal lights.
A working three wire switch is harder to find that a working six wire, so you should be able to sell the 3 wire, buy a 6 wire and be a few bucks ahead.

not sure what type of arrangement you have. 3 wire switches were used for USA busses with a brake light decklid too.

if you have dual filament taillights and are using a brake light deck lid as your only brake light, where the turn signals and single brake light are independent of each other, you use the 3 wire switch, because the brake light is not routed through the turn signal switch. both front and rear turn signals (per side) are controlled by one wire coming off the switch.

if you are using the 58/59--61 dual filament taillights and are not using a brake light decklid, you need to use the 6 wire switch, since the brake lights and turn signals use the same terminal on the taillight bulb, and which side flashes versus which is the constant brake light is controlled through the turn signal switch. each turn signal (front left, front right, left rear, right rear) is controlled by a different wire coming off the switch.
