how would the size of a chamber on the head affect the overall performance of the motor?

The short answer is, it has mostly an effect on the compression ratio the engine has when figured with a given bore and stroke. The true answer is that it is part of a much larger balancing act as far as the shape of the chamber, the flow of incoming charge, and the flame travel as that compressed charge is burned and then expelled. This needed to take the cam profile and overlap into consideration, the potential for the amount of charge that the intake and fuel system can supply. The efficiency of the burn within that chamber, whether flying monkey truely do exist and a bunch of other things. If it was an easy answer, then we would all just auger a hole in the head and run it. Right at this very minute someone is pondering the combustion chamber of some engine and thinking they have a better way to get MORE out of that explosion happening a couple of thousand times every minute.
