I am hoping to refurb my original headlight switch; it’s in surprisingly good shape internally for its age, looks like new inside except for some obvious rubbing where the contacts meet. The external tabs have cleaned up well also where they previously oxidised and dull.

The switch had a good covering of a light grease over the internal components when I opened it up, presumably some kind of dielectric grease? Should I use a dielectric grease again on reassembly? I get that a dielectric grease coating would reduce oxidation and protect surfaces but it seems counterintuitive to coat electrical contacts with a non-conductive material, particularly in a 6V application...

Yes, use a light coating of dielectric grease on the contacts.

Just did the same thing to a switch for my 57 last night. If you haven't already seen it, there's a good write up on type2.com in the "library" section that covers refurbing headlight switches.
