how do I pull the headlight switch on my '72 I unscrewed the top but the plunger deal in the middle keeps me from getting a screw driver on the metal deal to unlock the relay from the dash. how do I pull the center thing?

I used a pair of pliers to unscrew that slotted looking piece. It takes some time but it comes off.

There's a dash switch removal tool that may do it for you:

Those tools are nice, especially for the early non padded dash models, ( which you could scratch the paint. Masking around it with a few layers of masking tape solves that trouble unless your a superklutz!)
however if your not working on these cars for a living you may not want to spend the $... for the padded dash models a pair of needle nose and some patience works just fine.
