I just realized much of my paint is in my garage where pop cans just exploded from freezing. It's gotten down to -3 so far this year. How does freezing affect paint? Is it all ruined or is it just a matter of re-mixing?

I've heard it both ways. That your paint is distroyed and that it doesn't hurt a thing. Personally, I'd still use it but try and keep it where it won't happen again. If you are going to be painting frequently or over a long time, pick up a dead refrigerator, add a light bulb inside, and use it to store your paint. Warm it up and mix very well before you try using it.
