I am going to buy 2 new heads for my 74 Thing and they are asking what CC I want. The heads on the engine I have now I have no idea if they are the original or what they came off of. The engine was "rebuilt" (poorly) when I bought it so I don't trust the parts I have. What would be the best CC for the crappy gas that is avaliable now. Keep in mind I will be taking this on a long trip next year and want it to be reliable.

Depends, whats your deckheight, cylinder bore, and desired compression? I believe stock heads are around 53cc's.
