I'm looking for suggestions/ideas on the appropriate angle the engine/trans should be on a Ecotec in a VW.

I don't know what the oil pickup looks like in a Ecotec engine, so I cannot give you and answer to how much angle to use.
5 to 10 degrees of angle is what most use with a VW engine to help with clearance on the back end.
The mounting kit sold to mount a Bus trans in a Bug chassis is set at 10 degrees to get shift linkage inside tunnel. In your picture that does not look like you have to work within that constrains.
Looks to be an interesting project you have.

I have it at 6 degrees now. I think that will be sufficient for the oil pick up and still have some clearance in the rear.

Yes! It should be an iterating project. Wanted a convertible, but with some off-road capabilities. Bought a 1970 and pretty much tossed everything but the body.

No real restraints with ecotec angle for oil purposes, the sump is deep and side to side narrow. Just give it about 5 deg to get as much rear sump clearence as you can. Mine was power steering pump block off plate a 1/2 inch into the flat back from parcel tray area. Never had an oil light come on during some very steep decents. I would rather tilt it foward to have better oil control climbing than when decending because you can coast down hill.
