Is there any way to find out/ confirm where my Bug was produced. where it was sold, and maybe even to who? the markings under the trunk liner are gone...

I would prefer to find out through my own research but I don't know where to start.

I don't really want to do this if i can find out on my own but, What are these birth certificate they offer and what do they tell me specifically about my Bug?

I believe it was sold new near Letchworth, north of London to someone who worked on Chicksands Air Force Base as a military contractor with GTE.

Its a 1967 vw blue sunroof bug

I've never ordered one of those, but others here have (see the thread on them). Those take as long as 6-8 months to come back, and sometimes contain erroneous information, but it may be worth a try. The more info you can send them, the better the info you get back will be. Include your chassis and engine numbers; they will not produce the engine number, but they can confirm if it is original or not if YOU provide it first.

How long did it take you to get your certificate?

I emailed them and they emailed me back with that information about both of my VWs within a week. They sent me the production date, delivery date, where delivered to, outside color, production date and delivery date. All free.
