Let's say you sanded down to bare metal...

Fix lows and highs and use filler
Sand then clean
Spray on etch primer
Sand then clean
Spray on primer sealer
Sand then clean
Spray on base coat
Let it flash
Spray on clear coat

If you are using a single stage, just spray on after primer sealer. Is this correct?

Sounds like you have the basic jist of it. The one thing that I see being omitted is applying a primer surfacer after etching. This is the step where you will be doing alot of the tedious block sanding. After your car is straight then apply sealer and paint.
