Maybe I'm not searching correctly....

Anyone have any pics of what a bug looks like w/ shaved gutters?

My passenger side gutters are horribly rusted....had it sandblasted and primered. The entire passenger door section is rusted through. Before I tackle the job of cutting them off and Mig welding them, I wanted to see some samples.

Anyone have any tips?

You better know what you're doing. The rain gutters main purpose is the fuse the roof section to the lower body. Without the drip rail, the two skins will peel apart from each other.

Anyone know if this is also what has to be done to shave the gutters on a Ghia?

Pretty much on most old cars (multiple panels meet at the gutters), at least I know it's the same for Beetles, Type 3s and original Mini Coopers. So it's safe to assume the same on a Ghia.
