Silly question here ... On a full flow engine setup, should I run the external oil filter AND leave the stock oil cooler in place? Not sure why I am having this Sr. moment, but I think somewhere I read something related.

One cools the oil and the other filters the dirt out. They serve to different purposes.

Leave the stock cooler in place.

Thanks ! Can sleep better now ! ... One more question regarding oil cooling. I will be installing a 2276cc on my bug. I am going to have a 1.5qt oil sump and the external oil filter. Would an oil cooler be a must for this engine? I do not plan on racing or anything like that ... temps here in the summer kind of take me out of driving it on hot days. Just wondering ...

Likely not required.

Where are you going to put the oil temperature sender?

There isn't much moving oil at the oil pressure sending location. A better location would be the sump or the oil pressure relief location. Someone correct me on that if it's wrong.

If your engine is out, why not just install it at the oil pump location? That is really the best spot.
