Wheel/tire fitment for widened fenders

Im trying to plan ahead on my build so I don't buy the wrong things. I have a 72 Super that I am going with the german look theme. I am looking into running wider fenders (2" all corners) and I am wondering what size rim/tire combo I should be looking at to run flush with the fender?
I am looking into rims that are 17x8 with available offsets being et20 & et30. Also looking into either running toplines maxx strut or maxx extreme to allow for better clearance as well as upgrade to disc all around.

So in short, will those rims work for what setup Im looking to run and what size tire(s) should I be looking at? Any pics to help visualize would be greatly appreciated. Would like to see an example of what others are running to get more info.
