I understand that I'll need to modify my repro Okrasa heads if I want to use a thermostat. I would imagine that a drill could be used to cut a hole though the fins, but I'm concerned that I would break some/all the fins in the process. Has anyone modified their Okrasa heads to work with the stock thermostat?

Use a milling tool and cut from top down. Avoid cutting on the side of each fin and it should be fine.

That would have been a good improvment to the og design imo.
