kiwighia68's comments on finding a complimentary color are dead on, IMO - you want to find something that will accent the exterior color in a subtle way.
CiderGuy, I know that you said that "Blue isn't speaking to me", but perhaps you should try listening a bit more carefully.
In your original post, you said "The one thing I am sure of is that the car will be painted a metallic silver, most likely with some silver and possibly some aero silver blue flake in the paint. Maybe both flakes. I've found a flake that is close to or reminds of aero silver."
A blue interior sounds like a natural to me, and would make the silver blue flake in the paint really pop.
I also like Darrel's suggestion of using a perforated version and a smooth version of the same color as an alternative to the traditional two-tone.
The red interior picture posted by Rome does something similar using smooth leather and suede.
If your heart is set on including a starkly contrasting color like white, then perhaps you could just use it in the form of piping on the seats and door panels.
If you're going non-stock, you could even consider getting a subtle contrast to the center panels by using diamond pattern stiching similar to this ...

If you're really set on doing a more traditional two-tone interior, perhaps you might consider using a grey (or maybe even a gray) instead of a white.

Kccoupe great reply. I am buying the interior from TMI, so I am somewhat limited. I am looking at red with grey or cream something with a contrast that still goes with the car color and salt & pepper carpet.
I've also noticed that I have color swathes of the same #06 grey that don't match. One would work with the red I'm looking at, while the other swath wouldn't. _________________ ----------------------

I have more color swathes ordered. Burgundy is one of the colors. Its very difficult to use the online color swathes. _________________ ----------------------

I have made a decision for the 1970 convertible interior seat colors. I am going with a two tone seat, These colors will be for the front and rear seats.
The outer surround color will be # 23 Brick Red Smooth Vinyl ( which looks very different online then the color samples I have. ) and for the inter 12 inch color insert # 88 Chalk White smooth vinyl. The headrest color I am still unsure about, since it needs to be one or the other color.
I had a few people look at the color samples placed over the Pale Agave Metallic paint color, and this combo was the most popular. I placed the order, so this is it ... _________________ ----------------------

I have seen several Silver
Ghias with a brick red interior and they are Beautiful. |

While I did see a white Ghia racing a white 911 the other day, normally I don't see many Ghia's out this way at all. The color I picked for the car is metallic silver with pale green and even blue in it depending on the light. Hard to match. _________________ ----------------------
