If I eliminate the power steering pump and AC pump, is this the belt I should use?

I have used the 5PK690, 5=5 ribs 690=690mm. There is some leeway in the belt length.

Just cross referenced your number and it is a 5PK0690, should be right.

I'm running an AC Delco belt: 5K275, OEM PN: 88932567,
This is using the original belt tensioner (cut down to eliminate the PS part) and the OEM non-AC alternator mount.

Thanks Jeff. Just got the pump off today. That was a puzzle unto itself! I'll be cutting those brackets down too.
