Reason why I am asking is I'm looking for new Mexico type heads, the ones with larger valves and the longer spark plugs. I have some new ones at hand claiming they are made by VW Mexico with part no. 043 101 356. Is that the big valves/long plugs type?

Do note that those are CIP's part numbers... which sometimes vary from what the real number. The number on the heads themselves won't be the same, that's just the casting number for the head. The number for a finished head is what you mentioned. Also note that they have a "D" at the end and the number you stated had none.
In other words, I'd ask the seller those questions about valve sizes and what are the plug length. If "at hand" means nearby, you could just check yourself.

The part number tells us what casting they are, and I think it is safe to say they use the long reach plugs. The mexico 043 is a good casting
Larger valves may have been installed, but you cannot tell just from the part number |

the mexico 043 generally have the long reach(as seen in the pic above), but there are always odd-balls, so many have been made over the years |

Stupid questions maybe, but what would the difference between Left and Right be? I thought the DP tops were identical on both sides.
Hydraulic lifters, is that what I want to go for?

I have used the so-called Mexican "fuel Injection" heads on 3 different cars in the past few years.
One set was machined for old style 88mm cylinders.
They run nice and cool, and the 3/4 reach spark plug bores are a good feature. They allow you to use plugs with a 5/8 hex which makes a little more room for a CHT ring. I am currently using NGK BCPR6ES-11 (6779).

The Left side has a hole to fit the engine temp sensor. |

Yes, the heads I referred to in the earlier post can certainly be used on a carbureted engine. In fact, I had to drill and tap the boss for the head temp sensor necessary for D-Jet on my Squareback (very easy to do).
It's only my personal opinion, but I believe these are the best heads currently available for stock applications.

you can use them on a carbureted engine. the difference is a temp sensor boss, smaller valves and thicker valve stems (at least on the old german heads) |
