How fine a grit do you need on bare metal before you apply the primer?
Do you need etching primer or is epoxy good enough if you've sanded the metal as opposed to having used a chemical stripper?

If there are no bodywork to be preformed then 180 grit is fine. There are two ways to apply primer. First you can treat the metal with metal cleaner/conditioner then apply the epoxy, make sure that you have a film build of at least 1.2-1.5. Second is that you can apply a coat of etch prime then apply the epoxy over,which ever you choose both works. If you used chemical stripper make sure that you wash all of if off or problems will occur later.
