I know some folks do this already, but I've started to collect some NLA engine parts here and there, to keep my '79 Westy on the road as long as possible. Even though I don't need them now, they will buy me some insurance for the future.
I'm sure the list is extensive, but here are some parts I recently purchased, I live in CA, so I have to get smogged every 2 years.

Decel Valve
Exhaust Crossover Tube with EGR tube
EGR Valve and extra tubes

We share L-Jet with Jaguars, Alfas, Opels, Datsun, Nissan, etc. Don't be afraid to shop around… Many refurbished parts are available now that weren't ten years ago. True, the AAR you can buy at AutoZone probably isn't calibrated 100% as well as the Bosch original, but nobody's engines are good enough to tell the difference.
Every L-Jet bus owner should have a spare double relay, AFM, resistor pack, fuel pump, fuel filter, and a half dozen TS2's onboard, along with a dozen feet of wire and various crimps/tools. This is a given.
On an important trip, I won't leave town without a few things on L-jet:
Kyle wiring harness.
Echlin points and condenser or 123 Ignition distributor.
Spark plug wires that don't shock you when handled at idle.
It's surprisingly hard to find a supplier of spark plug wires that keeps good ones in stock more than a few months. When you find a set that runs well, buy a few.
Fuel pumps are annoying; there seems to be more crap than ever despite paying name-brand prices for name-brand doorstops.
O2 sensors, fuel injectors, etc. are used on so many other makes and models, you won't have to worry about those things until the gas starts to phase out.
Anti-smog test sentiment for classic cars will eventually pass some kind of legislation in my lifetime. It will be sad to hear every late bay whizzing by me no longer running like a top.
