I believe about 30 amps for stock Beetle generator. Which is what I run on my own 1970 and my 1971.

Remember, switching to an alternator means new stand, maybe slanted fuel pump and corresponding pushrod...

Whatever the stock one is I have never found it to be inadequate in my 50 or so years of driving them. Keep good bearings and brushes in them and the commutators clean and they do everything I need. Maybe you need more output if you run a bazillion driving lights and a stereo with enough decibels to kill an elephant... I tend toward a simpler life.

I think most VW engines are upgraded to an alternator just for the looks.
