How often should the transmission oil be changed and what is a recommended oil for it?

Every 30k is fine. Use any high quality gear lube.

Also do a search there's a lot of posts on which gear lube to use.

Start with this one that is fresh. http://www.thesamba.com/vw/forum/viewtopic.php?t=241585

<<moderators note>> lets not debate GL4 vs GL5 here also.

Loosen the filler plug (just to make sure you can) before removing the drain plug. You'll need 17 mm allen wrench with open-end wrench to supply torque, or the allen wrench socket. I use Valvoline, and their pump that threads onto their plastic bottle.

You'll also find most of the scheduled maintenance mileages in the back of your owner's manual. If you don't have good documentation from the previous owner for when maint' was performed, you'll need to do it all.

Otherwise, just follow the schedule in the owner's manual.
