Another Sat. and another Westy inspired meal. Having fun cooking in the driveway and looking
forward to doing some camp cooking next weekend.
This week's meal was another chili dish, this time I made white chili. The recipe is pretty easy,
which is probably why I like it. Here goes with the ingredients: One cooked chicken breast, a Jalapeno,
an Onion and one Green Pepper. Some garlic, lime juice and some Cilantro. Rice as well as Chili powder
and Adobo seasoning. A small can of corn and a large can of beans.
The recipe I was following called for Cornstarch to thicken the broth but
I thought the Rice would give it some extra texture.
I was satisfied with the end result, as well
as Mrs Timwhy was. If the wife likes it I'll be cooking it again!

I wasn't sure where else to put this, so I'll tack it on to this thread.
Imagine my surprise when reading about my other favorite pastime (The LSU Tigers and tailgating) when I happened upon a mention of the World's Greatest Vehicle:
"Family and Friends tailgate and spends the night in his 1983 Volkswagon Westfalia the night before the game so he can light a succession of wood-fired pits just after sunrise. "

It's rare--scratch that--unheard of to read of an LSU tailgater with a Westy. I go down for a game or two per year and have never seen one.
