Best idea I've heard is a fuel cutoff solenoid with a hidden (or in plain sight, looking like a foglamp or other switch) switch.

This way, they hotwire it (piece of cake), and confident they are getting away, make it about half a mile before the fuel runs out of the float bowl. They are now on a boulevard, exposed and likely to get noticed. And they may not come back for it, figuring it's a shitty old VW that may quit on them again at any time. Best for a slightly patina'ed car, not a restoration.

Better than a kill switch that they could take time to wire around while still unnoticed.

Do millennials have disposable income to spend on a vintage VW?

I use hidden ignition switches in my buggy and a relay with a hidden button that has to be pushed to power up the car. If you don't press the button there is no power from the accessory side of the switch and nothing powers up. You can crank it forever or try and hot wire it but there is no live wires in the car without the relay being activated. It opens when the ignition key is removed.

FYI, the Tile communicates via Bluetooth. This means it's maximum range is about 30 feet (and without sheet metal blocking any of the signal). It does not have an internal GPS. It relies on your linked phone being near enough to detect it, and then your phone uses its own GPS to record the location.

They do now have a "community" feature, whereby if any other Tile user walks by your car, their phone could detect your Tile and update it's location in the database. For me, it seems like a long shot to plan on being able to recover a stolen car using one of these.

You can try to prevent a theft, but even the best anti-theft is not fool proof. While certainly being proactively anti-theft, be pro-recovery. Equip your car with modern technology to alert you to an issue, track and find your car.

Hook up a horn like how the dome light is to the door switches and have a switch to turn it on and it will horn go if you open the door, but you can switch it off. I’m sure there’s a relay that once it’s on it will stay on until you come turn it off. Just and idea, also, you’ll hear if someone is trying to get into your car also.

So I can just run a wire anywhere along my the length of the tach wiring and jump it to ground with a hidden toggle switch to make circuit go to ground. Correct?

Someone on The Samba had a kit that converted a stock steering wheel to a removable steering wheel. Only problem is, you're left walking in Home Depot with a steering wheel in your hand...
