Because I DO NOT have a machine shop in my garage I would just add a .010" shim and build the engine with .049" deck. Worrying about it any more on a street engine is just plain overthinking the process. On a street engine it won't ever make a bit of difference if you only have 8.9 CR or get your exact 9.0 target dream. The safe limit for deck height is .040", and I won't build an engine with less.
The difference between that .1 CR will be less than .1 seconds at the drag strip.
