Is there a gauge that will work with the cylinder head temp sensor on fuel injected engines?

Not that I'm aware of, the gauge could be quite simple, but the location of that sensor doesn't give an accurate depiction of real time head temps, it's purpose is just to tell the FI system if the engine is cold, or warmed up fully. By the time a gauge started to react the actual head temps could easily exceed danger levels, that's assuming you are pushing it so hard you could do it, CHT isn't usually a problem in stock Beetles that are tuned properly.

Thanks! The heads I bought have the threads for the temp sensor and I thought it might be useful to know the head temp but now I see that isn't a viable option.

Its possible, you would need to know weather it's a type J or K thermocouple,
This source has read out that would read either. The temp sender location on stock head is for the fuel Injection system to help it adjust, that temp may not be relevant. You could try the gage and see what the temps are at that location, I would guess, 150-200

It's not a thermocouple, it's a thermoresistor, the Ohm's to ground change with temperature.
