The factory put that horsehair/coconut fiber (whatever that stuff is) padding under the headliner. Although I guess it's technically above the headliner
Yeah, tons of fun removing old headliners and having that decayed padding stuff falling down onto you and getting all in your hair and down your shirt. Especially fun when mice have been living in the headliner. _________________ Currently own:

I put some remaining strips of dynamat on the metal, then a half inch thick pad of fibres (similar to what was originally, made of some thick jute material). With this, the roof is dead quiet.
If you want maybe a plusher feel, you could instead put in some soft upholstery wool. But it would only be plush between the 4 bows
