am i to assume that i need to tell the shop what size i need it to be, if possible? ( #8 ). I'd be giving them the replacement stud that I have, right?

If possible - and if the machine shop for some reason doesn't know - the preferred thread would be 8mm x 1.25mm.

But in reality a 5/16" stud would work fine, you'd just need an SAE 5/16 nut.

Like I've said before: I do like the brass 8mm x 1.25mm nuts which take an 11mm wrench.....

Any decent machine shop will EDM that out in short order. Depending on what left, you install a new stud or a step stud. For someone with the right tools, this is an easy job
I would weld a nut on, because I have a welder and not an EDM machine. Though I'm not sire how EZ outs weld, never tried.

Weld onto it and spin clockwise to get the ez-out... back out.
The grind out the rest of the stud with a carbide burr.

My customers prefer to keep it a secret what they broke off in the hole,
so then I may have to try it three different ways, clockwise, counterclockwise and pull on it, because I don't know what the thing is.

even if I'm unlucky, still faster than any other way.

well this issue has been resolved. I wish I could have seen it done.
The owner of the engine has a friend that does engine work. He did that weld the nut on trick and everything came out as it should. Screwed in the new stud and we are back in business. Had it back to me withing a couple days.

this may go along the same lines, maybe, but at the base of the alternator stand, where it has 4 nuts that screw onto the studs. One of these studs has been removed at one point and an odd ball bolt has been screwed in. I have tried tightening this bolt, but it only gets so far before it pops loose. the other three nuts tighten as they should. What steps can I take to fix this bolt hole? it's obviously stripped. I have not attempted anything. Wanna see what options I have before I cause any damage trying to fix it. I'd post a picture, but there is really nothing to show.

50 years ago I installed an oil filter on my first bug. The "feed" was from a T fitting on the oil pressure sensor. The return was through a banjo fitting on the generator stand. Is it possibly a banjo fitting?
