Should I run a windage tray with my engine? I will be doing a lot of hillclimbs and trail riding mostly. About the cam, does anyone run a Fat 442 grind? If so, would you recommend it for a mild 2056? Or how about a Web 86 grind? I'm looking to get a lot of low-end torque without losing to much top end, and those are the grinds that Fat and Web recommended.

I don’t have a clue what cam to recommend. I hate to say this but you might check the Type IVum or Aircooled Technology thread on STF. (HbB sorry about the STF suggestion, but they do know a lot about the Type IV)
As for the windage tray,

It was on the Type4Parts website. I know there have been quite a few negative posts about this particular business, but I doubt the info about a stock Type IV could be wrong.
Personally I am highly leaning towards a Type IV for my next engine, the only hang up I have is the initial sticker price shock.
*note* STF has crapped out again. Gheesh, what a surprise… I guess your going to have to wait until someone fixes it again. And that is why I stay with Samba! (well Samba’s just better in every aspect.)

According to all the sources I've checked, only the 914's had a windage tray. My engine is from a bus. I checked STF first about the cam, but it's down again, and I'd like to know soon so I can purchase it and get my engine back together. Plus, no one ever really helped me there, since most of those guys run on the street and not offroad. I was hoping someone here would be able to tell me.

the idea of a windage tray, in simplest terms, is to cut down on oil slosh. That's why slalom guys like 'em- no oil starvation through the esses. I figure it can't hurt on an off-road car. it may not be necessary, but i can't see it doing any harm, and it just might help.

Have you split the case yet and checked for your self is there is indeed a windage tray? You can just call Raby and order a cam through him. I would assume if you’re buying a part through his store he would recommend the right one for you. (maybe)
