Scott-
I ran some 14x5.5's on my 69' truck for a long time. Its lowered many inches too. Had them running with adapters. No real clearance issues.
I originally tried to run 16x6's on it but the back would rub, it was just too tight with adapters- lowered. I cant remember, but I think I had to undo the lower shock bolt to get the wheel down out of the wheel-well far enough to remove the wheel when necessary- due to the adapters.
Somewhere I have a picture. But they weren't too much of an issue.

You know...I think I did. But my truck is lowered 5 or 6 inches. And the adapters were the main thing that got in the.
Neither the 16's or 14's would have been any trouble if I had no adapters, the offsets are actually pretty good for VW's. I suspect that the later hole pattern (5x112) adapters being not-as-thick may make it easier. But I had to use the usual 5x205 to 5x130 that actually add probably 2" to the track on each side. They stick out pretty far.
