my Chili Recipe
2lbs , browned ground sirloin
one large onion (two is better, adjust to taste )
4 cans of light or dark kidney beans
two small cans of tomato paste
two cans of tomato sauce
5 tablespoons of chili powder
(more if needed or to taste,be slow on this as it is easer to add, imposable to take out)
salt to taste
one teaspoon of Cumin
OK, here we go,.brown the beef in a pan, draining all oil off.
cut up the onion and put into a big pot with the tomato paste and sauce
(i like big chunks, but smaller work too)
drain three cans of the beans and add ,leaving one if you still think you need more.
simmer over low heat, adding the chili power and cumin.
add the drained ground beef ,some Basel, oregano, to taste
mix well,.add only what water seems to make it a bit easier to mix,.. do not over water!! simmer for at least an hour or two on low heat, stirring often,
put into bowls, add Monterrey jack cheese and crackers and a hearty appetite!
(the beauty of this is you can add what ever pepper that floats your boat,
Thai peppers* are killer in this,..heh)

make what way YOU want.
when i make it for the local cookoff, i'm cooking for 200 to 300, sirloin would bankrupt me.
the wonder of cooking is you can make it anyway you want, recipes are guidelines, not torque specs. if you have imagination you can have it anyway you want.
the Recipe i posted is a good solid chili that any cook or inept cook can follow.
instead of fixing what I wrote, fix yourself a bowl or a pot.
