so I epoxied up one of the sheetmetal braces in the rear quarter panels in the early daylight hours and the thing is taken forever to set, dont know if I will be able to drive the van yet.
Hopefully it heats up soon but if not I'll be standing by for the next meet-up! _________________ 1984 Westy Camper

Hey guys...it was nice to meet everyone today and check out a variety of cool projects!
Mid 60's weather, good food and Vanagon people--what a great combination. I hope someone has some pictures to post.
There were a few of you who were interested in my recipe for the Roasted Sweet Potato Salad with Chipotle Lime Dressing, so here it is...enjoy! --Kim
Kim's Roasted Sweet Potato Salad with Chipotle-Lime Dressing
Dressing:
Finely grated zest of one lime
Juice of 4 limes (1 c.)
1 chipotle pepper (from a can, chipotle peppers in adobo sauce…you can freeze the rest in ice cube trays and save for next time!)
4 tsp. adobo sauce (from the same can above)
1 clove fresh garlic
2 tsp. chili garlic sauce (from Asian food market)
1 TBSP. honey
½ cup Canola oil
Blend ingredients together. An immersion blender or mini food processer works well.
Makes one cup of dressing. You can freeze unused portion of the dressing for next time, or you can use as a dip if you make wraps from the salad.
Salad:
3-4 medium yams/sweet potatoes
2 (15-oz) cans black beans
16 oz package of frozen corn
4 green onions
1 large handful of cilantro
Canola oil
Ground cumin
Ground coriander
Salt
1. Preheat oven to 400. Peel and cube yams. Toss lightly in canola oil and sprinkle liberally with ground coriander and cumin. Toss again to distribute seasonings and sprinkle lightly with salt. (I do this all on a large baking sheet covered with aluminum foil. Allow extra foil to fold up beyond the sides of the baking sheet for an extra barrier.) Roast yams for 20 min. , check, stir, and roast for another 30-40 minutes for extra crispiness.
2. Finely chop green onion.
3. Medium chop the fresh cilantro.
4. Drain and rinse black beans, set aside.
5. Boil water for frozen corn and cook according to package directions. Drain corn.
6. Combine roasted potatoes, black beans, corn, green onion and cilantro.
7. Add ½ to ¾ cup of dressing. Mix and let sit for flavors to absorb.
8. Eat as a salad, serve with corn tortilla chips, or even better…warm up a large whole-wheat flour tortilla, add large lettuce leaves and salad to make a delicious wrap. Enjoy! _________________ 1986 Weekender, automatic, 2nd owner
