I had a good time too. Counted about 18 or so during the time I was there. I too got some good information and enjoyed talking to everyone. One new thing I had not heard about is the Buses by the Bridge event in January. _________________ Alan

Bummed I missed this. I was right across the 5 freeway at the High Dive Bar watching football. You can look out the front door and see the parking lot y'all were in. _________________ '85 GL, 1.9, 4spd (Sold, we'll miss it)

Had a great time meeting everybody. Loved the van with the big kitchen. Don't let my wife see that. Thinking about going out to the buses by the bridge. Is anyone else going. Would be cool to caravan out there.

Could the family from Clairemont (San Diego) PM me with a recommendation and way to contact Arya (sp?).
He sounds like a potentially good local resource for help with DIY Vanagon projects in the future?

Planning on going to that too now. Didn't even think about caravaning! That would be cool.
The San Diego meet was really cool. Monthly meets down there would be too far. Around Long Beach would be about the furthest worth going to often but idk if those who were at the meet are all SD locals. |

It was great to see so many vanagons show up - some in vans that actually needed more work than ours. The Mission Bay Hilton never looked better. Lets all do it again sometime. |

That family is not active on the Samba. They are friends of ours so I called them and told them about it on Sat am to see if they could join us. If you PM me I will give you their number. Brian is the dad's name. I don't know how to contact Arya (?) directly.

Believe it or not I was at the High Dive also that day, in fact my buddy drove the van home for fortunate reasons. We were probably drinking back to back. I had a function that morning or I may have stopped by the Hilton, but looking at the pics, my Westy needs some prep work before I join in. |

Kim's Roasted Sweet Potato Salad with Chipotle-Lime Dressing
Dressing:
Finely grated zest of one lime
Juice of 4 limes (1 c.)
1 chipotle pepper (from a can, chipotle peppers in adobo sauce…you can freeze the rest in ice cube trays and save for next time!)
4 tsp. adobo sauce (from the same can above)
1 clove fresh garlic
2 tsp. chili garlic sauce (from Asian food market)
1 TBSP. honey
½ cup Canola oil
Blend ingredients together. An immersion blender or mini food processer works well.
Makes one cup of dressing. You can freeze unused portion of the dressing for next time, or you can use as a dip if you make wraps from the salad.
Salad:
3-4 medium yams/sweet potatoes
2 (15-oz) cans black beans
16 oz package of frozen corn
4 green onions
1 large handful of cilantro
Canola oil
Ground cumin
Ground coriander
Salt
1. Preheat oven to 400. Peel and cube yams. Toss lightly in canola oil and sprinkle liberally with ground coriander and cumin. Toss again to distribute seasonings and sprinkle lightly with salt. (I do this all on a large baking sheet covered with aluminum foil. Allow extra foil to fold up beyond the sides of the baking sheet for an extra barrier.) Roast yams for 20 min. , check, stir, and roast for another 30-40 minutes for extra crispiness.
2. Finely chop green onion.
3. Medium chop the fresh cilantro.
4. Drain and rinse black beans, set aside.
5. Boil water for frozen corn and cook according to package directions. Drain corn.
6. Combine roasted potatoes, black beans, corn, green onion and cilantro.
7. Add ½ to ¾ cup of dressing. Mix and let sit for flavors to absorb.
8. Eat as a salad, serve with corn tortilla chips, or even better…warm up a large whole-wheat flour tortilla, add large lettuce leaves and salad to make a delicious wrap. Enjoy! |
Hey everyone! For those of you who are interested in a DELICIOUS way to use up leftovers of the Roasted Sweet Potato Salad, try my new-fangled recipe for ENCHILADAS!!
Pre-heat oven to 350 degrees.
Mix together:
1 1/2 Cups of leftover Roasted Sweet Potato Salad
2 TBSP cream cheese (I used low fat)
On stovetop, heat up 6 corn tortillas until flexible. Fill each tortilla with cream cheese mixture. Roll up and place seam side down into an oiled, 9x11 baking dish.
Cover the rolled tortillas with a 10 oz can of enchilada sauce.
Sprinkle 3/4 cup of shredded, low-fat Monterey Jack cheese on top.
Bake for 15-20 minutes until cheese is melted and enchiladas are bubbling.

Have any of you good people in San Diego ever come across the white '91 syncro that my brother sold to a friend a few years back? It has a large 8" diameter iron pipe for a rear bumper and a Ford Ranger engine in it. Jacked up a few inches so that the engine could fit without modding the engine cover. Shouldn't be too hard to miss. North County area...

I would do doheny.. can you promise fun uncrowded surf tho?
I'm all for keeping these on a regular basis since I missed the last one due to the fact mine is still gutted interior wise.
As soon as I get the rest of my insulation/soundproofing and interior/upholstery done I'll be happy to travel as far north as oc for a meetup haha.. lets keep the ball rolling, and I'll be inclined to set a date for one in the next month or so when my vans interior is FINALLY finished so I can show it off _________________ 1984 Westy Camper
