Maximum Oil Viscosity?

Just asking to satisfy my curiosity: My engine builder advised me to use 20-50 engine oil. If the original engine was designed to run on 30 weight, why would one run a multi-viscosity oil with a viscosity higher than 30?

I know there are several lengthy threads on engine oil in which this specific question might have been answered. Forgive me for not reading them.

I uses synthetic 20-50 in a full tilt Auto-X motor because I wanted the extra assurance of keeping rotating part oiled during hard cornering where the oil pickup sometimes takes a gulp of air (less flickering of oil light) .... But in street motor (pumped 2084) I run standard 30w...

I would go with what engine builder recommends, the new oils are lot better in many way than what was recommended 40 years ago....
