Does anybody know what this switch is doing?
I guess it is a 1967 only thing.

I think thats part of the seatback release so the seats can pivot forward.

I might be very wrong but I once looked at buying a mid 60s Ghia and it had these door operated flaps which I think were connected to the seat back release lock so the seats unlocked once the doors were opened. This was about 20 years ago so as I say I could be very wrong!

Correct 67 seat back release. Part of those safety newfangled features!

As others have said, the 1967 model year Karmann Ghias had a one year only "safety" feature that locked the front seat backs in the upright position whenever the door was closed.
The "switch" in the door pillar is connected to a locking mechanism in the seat backs via a cable that runs across the floor pans in the arc shaped groove running from the outer front towards the inner center of each floor half.

While the seat back locking mechanism only lasted for one model year, that groove in the floorpan lived on in every VW Thing that was made.
