When I tore out the old rubber mat I ended up destroying this round plastic disc thing on the other side of the tunnel. What do you call this, where can I get a replacement and how do these come off/install?

That's just a plug that VW used when you don't have seat belts installed. They have a big Phillips + in the middle to unscrew. Looks like someone tried to take them out with too small of a screwdriver tip and destroyed them. Wolfsburg West has the adapter to install seat belts. On the floor, you might find threaded plates for the other side. If not, you can drill a hole and use proper hardware (Grade 8 )to attach the other end of the belt. Just search seat belt install threads, lots of good info.

If you do add shoulder harnesses, make sure you copy the late design of mounting points. The early cars had them too low, and after crash testing more, VW realized the bad design was folding spinal columns in half as the person flew forward.
