Does anyone know where to purchase the correct thermostat for the 81 Westy? This is air cooled and I believe the thermostat is made of paper baffles?

Here you go! Unless you source a working used one, this is the place for a new one that is built like the original. Read all about the construction as well. You want a Type IV thermostat on this page.

Check the Bay Window classifieds, all the Type 4 engines from 1972-1983 take the same thermostat. Type 1 thermostats can also be made to fit but have a somewhat different opening temperature.
