I don’t have a 914, just thinking about picking one up. Is it possible to replace the EFI of a 914 2.0 with a carburetor? Mainly asking because I’d rather deal with as few electronics and computer as possible. And carburetors, while they don’t perform as well, are simpler in my limited experience. I’m sure I could be easily swayed to abandon this idea. Thanks all.

dual Weber 44 IDFs work very well.

Abandon ship on this idea. D-Jet isn't tough to diagnose and make reliable, and if it's a '74 it may even have L-Jet, which is a simpler system and runs lots of 1975-on Buses and Beetles all day every day.

I'm in Eugene- Springfield and can help you out on keeping it original with FI.

never! The fuel injection is simple and works perfectly with the 914 engine

44s are overkill and only for racing situations where the engine is constantly at redline

Years ago I added larger pistons to a '72 1.7L along with the early FI. I spent hours and $ on it - it never did run as well as with the FI. Unless you modify the engine (to include changing CAM) I'd just leave it as is.
