I pulled the '68 transmission out of my '56 Beetle to fix some leaks. I discovered after I cleaned all the grease and grime from the case the diff side covers are pretty corroded...

I'd like to replace the side covers. If I do this, will this effect the ring & pinion back lash setting or are all side covers of the same part number the exact same?

one of the other members will have a better answer, but as I recall side bearing preload is set by stacking gaskets between the case and the side cover. if you replace the cover, you should have the ability to check preload

I thought the gasket stacking was for the axle flange. All the differential side covers I've removed only ever had one gasket.

Yes, the stacking is for the axle tube. If it’s a 68 trans, the sidecover should only have an o-ring. VW was pretty good at making interchangeable identical parts, so a side cover with the same part number “should” be the same. Regardless, you still would want to check the preload, and backlash to make 100% sure. The real problem becomes having the correct shims to reset the measurements if things do change. The bearing preload you could check with a feeler gauge under the sidecover when loosened, but you’ll need something to slip in the diff to have a point of reference to check the backlash with a dial indicator. IMO, take it to someone that does trans work.
