I have a 1.6 diesel that has the code Me on the cylinder head. The ports match the block perfectly so I’m assuming this is an ME engine but for some reason I can’t find a head gasket that fits. I ordered one from rock auto that fit perfectly all the way around except for one spot. Any help identifying what gasket I need would be incredibly appreciated.

That head gasket is for an engine with hydraulic lifters, thus the additional oil return hole in the gasket. Your engine block is for a mechanical lifter cylinder head. You will need to source a head gasket for, let's say, a 1982 diesel Rabbit. You also need to make sure that you count the notches on your original head gasket to ensure that you get the proper thickness head gasket.

I know I need a two notch gasket for sure but that makes a lot of sense. I will look for one!

Be sure to thoroughly clean out the head bolt holes in the engine block, oil or water remaining in the bolt holes of theblock will hydraulically fracture the block when you torque the cylinder head.
