I'm replacing the motor mounts on my 83.5 1.9L.

Bently says
engine mounts: 61ft lb
support member 33ft lb.

I just want to verify, but the engine mount to engine carrier bar is 61ft lb (the look like M10-ish). The 'support member' is the engine carrier bar to frame/body - they are M8.

Also the arrows on the engine carrier bar point towards the front of the van. I also hand tightened the motor mounts to engine carrier bar. I could not find toque values - but I'm pretty sure they are M8 sized as well.

Does all this sound correct?

I’m sure the M8 bolts are a lot less. Somewhere around 18’ foot pounds. 10mm carrier bolts are also less. I’m thinking in the 44’ pound range. You can always find online torque tables for all hardware types

Yeah a wicked rough general estimate is 10Nm for M6, 25 for M8 and 50 for M10
so it Ft Lbs -the M8 is 18 Ft-Lbs and the M10 is 36 Ft-Lbs, so your thoughts are indeed correct.
