Looking for any pictures of wide five zero off set rear disc brakes. I am looking at installing some on a rail.But I have fenders on it and want to see if my mounts will clear the brakes.

Hmmm interesting timing. I just finished restoring my old Neal brakes with my Wilwood calipers for my rail. Picked the rotors up from the machine shop two days ago, last piece of the puzzle!

I like these because the rotor mount hat and wide 5 adapter plate is Aluminum, but the drive hub is Cro-mo so it won't bang out like softer cast or broached aluminum disk kits.

JaMar currently makes a nice kit designed just like mine.

Question. If I run drums up front, and disc in the rear, will it help me prevent under stear while braking around corners? Or would I have to adjust the preassure in the rear? I'm looking at the cb units and for only 325ish bucks if I remember right I'd rather run disc than rear drums.

In theory maybe yes,

But in reality, probably no. Rather what you'd want is a proportioning valve and good brakes, if they are disk or drum doesn't matter.
The rear drums WORK better than the fronts IMO.
I think this is because the backing plates are better attached and the wheel bearings more stable. Other models of VW got dual leading shoes which is way better, but the bug got crappy front brakes because apparently, it could not go fast enough downhill to need any better ones.
