The hacked oval I recently acquired has air shocks - is there any reason I couldn’t raise the back with these. If I raised the back, it would cause the back wheels to be vertical, right?

too heavy really. you can use a floor jack to lift the car and then fill with air. it's better to ditch them all together and get real shocks, and adjust the torsion bars to determine ride height and camber
