The drivers seat in my 95 EVC seems low in relation to the steering wheel and I would like to raise it. I’m thinking that a couple pieces of wood under the seat running front the back and longer bolts to bolt The seats down would do the job. Anyone done this? Thoughts?

Haven't done it, but would advocate against wood spacers. Anything that could experience plastic-deformation during an impact/crash and allow slack in the fasteners that is holding your seat to the chassis should be avoided.
Metal spacers? Sure. Wood? Hell no.

Wood and upgrade the bolts to 12.9 from Belmetrics or other reputable source eBay Amazon Harbor Fright

These youngstahs would hide under their pillows if they saw how we grew up…..

I once installed cut down Recaros from a Scirocco into my '67 split van with hose clamps. I was young, dumb and full of...just git r' done energy.

You could put a swivel bracket in and get 1" in extra height plus it would swivel afterwards!
