Why no Water-Cooled Parts category?

I am not trying to be a smartass - but there was a category started for water-cooled cars, so there is obviously interest and it isn't an exclusive air-cooled site. That is why I posed the question.

Do you mean the "Vanagon/Eurovan" forum or the "Other VW Vehicles" forum?

If you really have water cooled specific questions, you should post on http://www.vwvortex.com. The have forums for each specific vehicle and platform.
