The seats in my 62 are original but have some damage. I would like to save them and not replace the covers.

Is the missing metal piece in the back of my driver seat available anywhere?

Is there a way to fix the tear / separation at the seam? I have sewing machines including one for leather but how would you fix it when it tore at the stitches? I have a similar tear in the rear seat.

You could try taking the covers off the seat and restiching with your machine. Years ago on my early bugs I used to repair those with thin monofilament fishing line and hand sew them. Either way not as good as replacement covers.

I remember a previous post where the seat back bottom rail was missing but can't locate it. I think the suggestion was to put a curve into a suitably sized piece of tubing and then cut it open with a disc and trim to length. this rail has a c section to take the insertion of the cover. see this video at 5:30

for the repair to the cover I think you need to remove the cover and seek advice from a trimmer as it might need a piece of vinyl glued in to the back of the piece that's torn away before it can be re-stitched. for this small run of stitches it can be hand sewn.
