I may need to look into repairing my wife's front seats this winter, they're probably original but the coconut fibre is falling out of them and the drivers seat back is a bit mis-shapen compared to the passengers. When I looked online I see there's a low back seat and a highback seat but the images looked damn near identical. What's the difference or does someone have heights in inches I could compare them to?

The high backs are most likely 71 bug seats that were used as they fit directly into the seat tracks.
