replace floor pans in 71' westy

Hi, all.
Finally working at getting my 71' Westy back on the road after a 10 year hiatus. In the interim, it has been stored in a poorly sealed shipping container, and now the floor plans are in rough enough shape that I want to replace them.
I've never done bodywork before, so I'm assessing whether this is something I want to tackle myself. I've looked through this and the bodywork forums, and haven't found a clear description of this process. I plan on ordering replacement pans from KlassicFab or WW.
How do I remove the cargo and front floor pans without damaging other bits? Where do I cut? When installing the new pans, do they overlap other material or butt up against it? If they don't overlap, how does it seal? So many questions!
Any advice you can give to a complete bodywork newbie would be much appreciated.
