My buggy has a mostly stock 1641 engine with and 1 1/2" header system. After the flange on the header I want to fabricate a small muffler section and tail pipe. My goal is to keep it as quiet as possible. Wimpy, I know, but my kids are little and they haven't learned to appreciate loud things yet. I can always bolt the stinger on if I want loud! Any recommendations on generic mufflers that are known to work well on VW engines? Also don't want something huge back there. Any recommendations, are appreciated.

Super Trapp is the way to go.
Noise is tuneable to whatever you want, As is powerband
If I run 6 discs it is super quite. If I run 14 discs it has a nice rumble and barks a little when hard on the throttle.
If I want real noise I can take the end plate off and run it straight thru.

That cheap ol Empi baja exhaust is very quiet. And when you want loud, just like you stated, bolt on a pretty chrome stinger and back to the noise
Here is what the single quiet pack sounded like on my 1600...
Needless to say I missed the dual pipe sound and went back to it. My little girls said they didnt like it quiet either Good luck!

I followed Murzi's lead and installed a Hayabusa muffler on my 1776cc engine yesterday. Had to do some fancy pipework to make it all fit within the confines of the rear bumper but it worked out nice. I took some pics after it was finally painted today. I had to take it for a short ride yesterday and it sounds nice. Took it apart last night and prepped the tubing for today's paint job. The Hayabusa mufflers were from ebay ($20.00 plus shipping for both mufflers) and the 2"od 180, 90, & 45 degree elbows were from another ebay seller. I only used one muffler and it was enough to silence the exhaust, making the straight-cut cam gears sound louder. I like it!
