My setup is going to be: T1 trans with thing flanges, 3x3 arms, thing cvs, t1 stubs with t2 flange. Do I need the 19 1/4 or the 20 1/4 axles?

Best way i know how is to install your stub axles in the 3X3 arms and in the trans and get everything mounted. then lift your arms so they are straight across from the trans (shortest distance) measure from the center of the stub axle to the center of the trans stub axle and do this on both side. Then call up and get them coming.

Wisest way is to measure. I have 20 1/4 with my 3x3s, type 1 and 930's.
